Should you’re a fan of bananas and entire wheat, this recipe is perfect. I’ve made numerous banana bread through the years however my regular recipe called for shortening and I did not have any. Also only had two bananas. Cast across the internet for recipes and came upon this. I did not have any regular bitter cream however did have some Mexican crema, so I used that, together with some leftover pecans. Also added raisins. Batter was so fluffy I was skeptical, however OMG! I served it as a dessert cake and it was devoured. Definitely a keeper. Every other banana bread I have made was dense; this was gentle and fluffy.
